Fudge Pudding

Fudge Pudding

1 cup standard flourTopping
1 tsp baking powder½ cup brown sugar
2 Tblsp cocoa1 Tblsp cocoa
¾ cup sugar1 cup hot instant coffee
50 g butter
½ cup milk
1 tsp vanilla essence
  • preheat oven to 180°C
  • grease a 5 cup capacity ovenproof dish
  • sift flour, baking powder and cocoa into a bowl, stir in sugar
  • melt butter and milk in a saucepan over a low heat
  • remove from heat, stir in essence
  • add mixture to dry ingredients, mix well
  • spread evenly over base of dish
  • mix topping ingredients, sprinkle over pudding, carefully pour coffee (or hot water) over pudding, do not stir
  • bake for 40 to 50 minutes, serve with warm cream

Serves 4 to 6
