1 cup standard flour
1 tsp baking powder Topping
2 tblsp cocoa 1/2 cup brown sugar
3/4 cup sugar 1 tablespoon cocoa
50 gm butter 1 cup hot instant coffee
1/2 cup milk
1 tsp vanilla essence
- preheat oven to 180°C Grease a 5 cup capacity ovenproof dish
- sift flour, baking powder and cocoa into a bowl, stir in sugar
- melt butter and milk in a saucepan over a low heat
- remove from heat, stir in essence
- add mixture to dry ingredients, mix well
- spread evenly over base of dish
- mix topping ingredients, sprinkle over pudding, carefully pour coffee (or hot water) over pudding, do not stir
- bake for 40 to 50 minutes, serve with warm cream
