Sweet And Sour Pork
600 g pork steak or loin, cubed 2 eggs 120 g maize cornflour 2 Tblsp oil 1 large onion cubed 1 red capsicum cubed 250 ml (1 cup) white vinegar 4 Tblsp tomato sauce 220 g (1 cup) sugar 4 Tblsp oil
Prepare pork
- put eggs in a bowl and whisk
- put cornflour in a second bowl
- dip pork cubes in egg and then cornflour
- fry in a very hot pan or wok in small quantities and put aside
Prepare sweet and sour sauce
- heat 2 Tblsp oil in wok till very hot
- add onion and cook 1 minute
- add capsicum and cook for 1 minute
- add vinegar, tomato sauce, and sugar
- reduce heat and stir
- after it boils simmer for 3 minutes
- mix 2 Tblsp cornflour and 2 Tblsp water and add to sauce
- simmer until sauce thickens slightly
- pour sauce into a container
Prepare pork
- heat ½ oil in wok and add ½ pork cubes
- cook until crisp and brown
- remove from pan and repeat with remainder of oil and pork cubes
Combine
- return pork cubes to wok
- add sauce and heat until sauce boils
Serve
- serve with rice and optionally green veges
